Thermomix Madeleines

This Thermomix Madeleine recipe could not be more delicious, or easier to make.

Madeleines are traditional little buttery sponge cakes from the Lorraine region in the north east of France. They have a distinctive scallop shell shape, ribbed on one side and smooth on the other, achieved by using a special moulded pan. Best results come from resting the batter before baking and then eating the little cakes straight from the oven while the edges are crisp. Perfect with a cup of tea or coffee, or lovely with a sorbet for a simple dessert.

OMG… I am missing Japan like crazy right now. This happens from time to time. You see, between the years I spent living in Japan and the fact that I have just come back from 2 weeks showing my family the highlights of this amazing country,  there is a real hold the land of the rising sun has on me. Japanese culture is so much a part of my life and the trip was so easy, even with my 6-year old as we eat so much Japanese food at home and when we go out too. Watch out for a plethora of Japanese inspired recipes over the next weeks but for today, I’ll give you an easy one to make, Japanese Salad Dressing. 

This Japanese Salad dressing really hits the spot. This is the ubiquitous restaurant style dressing you get on your starter salad with all your kaiseki meals in Japan. It’s delicious, super easy to make and, if you’re like me, it’s a comforting reminder of home.

Piccalilli

Piccalilli is an English interpretation of South Asian pickles, a relish of chopped pickled vegetables and spices; regional recipes vary considerably.

This Thermomix recipe is the best piccalilli recipes I have tried; pile it onto your plate with a ploughman’s or spice up ham and colcannon with a generous dollop.

Bananas

Banana ice-cream

This banana ice-cream is hands down one of my favourite recipes in my Thermomix. I always over buy bananas and they always go brown. The kids just don’t eat them fast enough. But browning bananas is perfect for this recipe as the browner they are, the more the sugars in the banana have caramelised and the sweeter this ice-cream is. No need to add sugars, it’s sweet enough. And with just two ingredients, this recipe is loved by children and adults alike.

Basil pesto

This easy, beautiful pesto recipe is absolutely bursting with fresh herby flavour. … You can whizz up your own delicious pesto in under 5 minutes – it’s great for a fast-fix meal.  Homemade pesto is tastier than any shop bought version and this recipe shows how easy it is to make.

I use it on it’s own with pasta (always a winner in my home), spread it on a warm, crusty roll or smother it on salmon and steam with rice in the Thermomix; whatever you do with it, it’s a winner and a staple in my kitchen fridge.

Lassi is a popular traditional yogurt-based drink from the Indian Subcontinent. Lassi is a blend of yogurt, water, spices and sometimes fruit.  My kids love lassi and its the perfect drink to get some dairy protein and fruit into them. This Thermomix recipe is super easy, and tastes delicious.

A friend who had a Thermomix in France gave me this recipe. It was a potluck park and she brought along this most delicious starter. She’d been to a cooking class whilst living in Paris and this was one of the dishes made. I’m not usually one for sardines and in fact, OneGirl hubby immediately pulled a face when I added sardines to the shopping list but I made this last night for a dinner party and it went down very well.

As September approaches, aubergine (eggplant) is in season. Rich in colour and nutrients, eggplant is a great addition to a variety of dishes from appetizers and salads to meatless main dishes. Aubergine is often found baked in a Greek moussaka or Provençal ratatouille; roasted and pureed with garlic, tahini (sesame seed paste), lemon juice, salt and cumin for the Middle Eastern dip, baba ganoush; thinly sliced and fried to make aubergine crisps.  I love aubergine so I will share a few Thermomix eggplant recipes with you over the next month but today, I’m sharing my favourite one – Thermomix Baba Ganoush.

Whether you know it as mutabbal, moutabal, eggplant salad or baba ganoush (ghanoush), the smoke-scented aubergine puree is a classic part of any mezze. I lived in Saudi Arabia when I was younger and along with hummus, this is a staple in my house. I love it, I hope you do too.

What I love more is my Thermomix version. Instead of multiple steps, it’s one step. So even though it’s easy peasy, I thought I would blog this as sometimes I realise not everyone has the confidence to be converting recipes for their Thermomix.
