Chinese Five Spice

Spices and spice mixtures ground fresh in your Thermomix will always give a better flavour than shop bought versions. This Chinese Five spice recipe is a useful store cupboard standby to add a hint of the Orient to your dishes and is used in the wonderful Asian Salad recipe (coming soon) on this blog too.

Five-spice powder is a spice mixture of five or more spices used predominantly in Chinese and Taiwanese cuisine and also used less commonly in other Asian and Arabic cookery. Five-spice powder is used for cocktails as well.

Piccalilli

Piccalilli is an English interpretation of South Asian pickles, a relish of chopped pickled vegetables and spices; regional recipes vary considerably.

This Thermomix recipe is the best piccalilli recipes I have tried; pile it onto your plate with a ploughman’s or spice up ham and colcannon with a generous dollop.

I use it on it’s own with pasta (always a winner in my home), spread it on a warm, crusty roll or smother it on salmon and steam with rice in the Thermomix; whatever you do with it, it’s a winner and a staple in my kitchen fridge.

Thermomix Baba Ganoush

As September approaches, aubergine (eggplant) is in season. Rich in colour and nutrients, eggplant is a great addition to a variety of dishes from appetizers and salads to meatless main dishes. Aubergine is often found baked in a Greek moussaka or Provençal ratatouille; roasted and pureed with garlic, tahini (sesame seed paste), lemon juice, salt and cumin for the Middle Eastern dip, baba ganoush; thinly sliced and fried to make aubergine crisps.  I love aubergine so I will share a few Thermomix eggplant recipes with you over the next month but today, I’m sharing my favourite one – Thermomix Baba Ganoush.

Whether you know it as mutabbal, moutabal, eggplant salad or baba ganoush (ghanoush), the smoke-scented aubergine puree is a classic part of any mezze. I lived in Saudi Arabia when I was younger and along with hummus, this is a staple in my house. I love it, I hope you do too.

I’m a chocoholic. I don’t apologise for it. I have a slightly sweet tooth which can be seen on my hips but I make no apologies. They were good for child-bearing and I have two beautiful children as proof. One of my all-time weaknesses at restaurants is a molten chocolate pot and I eat them pretty much any time I’m at a restaurant. There are a few restaurants that truly get them right; they are either to baked, too sweet, too cold, too chocolatey. Something just isn’t write.

So after much research and recipe tasting, I’m pleased to say this one is reliable and very impressive for a quick chocolate pot which is gluey and warm, especially good for Autumn.

I was at the Good Food Show, Summer in the City this weekend gone and one of the show recipes we make is this Pea Veloute. It’s a delicious creamy soup is rich and wonderfully flavourful and the blending in the Thermomix is outstanding. The colour is amazingly fresh and vibrant. That’s why we do it at shows – it’s show-stopping. 

Thermomix Sweet Beetroot Dip

So, I’ve started recently to get Riverford Organic vegetable deliveries and whilst I love the element of surprise, I do something have that, ‘Err, what do I do with these?’ feeling that comes about with random veges that I wouldn’t normally pick up from the supermarket myself.

Kale? Turnips? More leeks than I care to imagine? Beetroot?

Well, this week, my challenge was to use raw beetroot and I found the most delightful recipe which I have converted. Whether you roast it whole, blend into a classic soup or drink as juice like the Olympians do – beetroot is low in fat, full of vitamins and minerals and packed with powerful antioxidants – a health-food titan.

This Thermomix Sweet Beetroot dip is a wonderful alternative to hummus and delicious served with vegetables and crackers (kids eating them too) or add to lunch wraps or vegetarian tacos as a healthy relish/sauce.
